Sickness, mess, homework, and waffles!


It has been about 5 days, and this is what our counter looks like.....lovely.  We've got every sickness pretty much covered. We've got colds, coughs, colds with fevers, sore throats, and pink eye!  Our latest victim? Rick, my husband had to call in to work today, he's pretty sick, but refuses to go to the Doctor. He choses me to be his 24/7 nurse. I'm trying my best...

and as embarrased as I am to show this to everyone.....this is what I've got. My mess of a kitchen, waiting for me to tackle it. I came home from school this morning, thinking of all the things I have to do, this being one of them, laundry, pick up the house, fold and put away clothes, pick up kids, homework with the girls, reading with the girls, and hopefully get some of my homework done, which I'm way way way behind in, and in between all those, run upstairs every hour or so to check on my hubby, to make sure he is still alive.....yeah, he looks really bad! So, it's lunch time and I think to myself, ok, something easy for Roman, and Andres (which had to stay home from school because he has pink eye) and this is what Roman says to me "mom make waffles please?" UGH! He added a please too! So, after offering other choices, he insisted on waffles......
How can I say NO? I mean look at this face! This is his pleaseeeeee mom face. Even though I've got a million things to do, I added waffles for lunch to that, and made a little cute boy very happy.

And I got to watch him enjoy his lunch....he had seconds :)

Verdict on recipe for Whole wheat no sugar banana bread and muffins

Ok, so here they are! What's the verdict on the taste? Well, I made the muffins (pictured below) with no nuts and no raisins (for my picky daughter...she hates raisins) they have a sort of bitter after taste (stevia). The bread that I made with raisins and nuts in it....was so great though. So there it is, I figured there are about 107 calories per serving, which would be 1 muffin or a decent sized slice of bread. Not bad...still have to be careful, but not bad.

Big Changes

So much has been happening this new year! Big changes.
Rick and I are both in school, 12 credit hours each. SO SCARY! This is my first time back to school in 10 years! Another big change, Rick and I finally made the commitment to be healthier, and to lose the weight that has been keeping us depressed. I want to be able to fit into the clothes that I have from before I got pregnant with Roman, and I refuse to get rid of them, so if I don't want to get rid of them, I need to actually do something about it! So, we found Herbalife, through a friend that lost over 40 pounds. We feel great. It's hard to give up all the things I love. One of the things that I miss the most is....BAKING. So I've been reading many "healthy blogs" and recipe variations, and substitutions. Being healthy is hard! But I have been getting results, I'm excited, so I want to keep it up! Besides if I can tweek my baking to make things healthier for us and my kids....it's worth it. So my first try, whole wheat flour, banana bread. I had a bunch of frozen bananas that I needed to do something with. It is baking as we speak, so I will let you know the results as soon as I taste it. Next on my  to bake list....Chocolate cake, with no flour! Instead of flour, you use black beans!! NUTS! I know! But it looks delicious! So I will try it. Stay Tuned.

I'm back!!

Happy New Year everyone! I am back, I've been here all along, but I have been so mad at my computer because my Internet Explorer would not open my blog!! It was so annoying!
So after all the technical difficulties, here I am, and I will be posting all about the New Year soon.....right now, I have to go get my kids from school........and
