Therapy for my soul

In talking with a friend, she suggested to curve my "emotional eating disorder"(that's what I choose to call it) with journaling, so I chose to blog....blogging journaling they both end with ING so same thing. I was inspired by someone else's blog post just now. She wrote about her sister. So every week I'm going to blog about someone in my life, I will start with my sister.

  She's beautiful inside and out! I do have to mention that she likes to pucker her lips for pictures. She has tried to teach me how to do it....but I can't do it as cute as her. She is the most caring person I know. She is the greatest friend...anyone is lucky and blessed to be her friend, because she continues to be your friend through anything....even when she is hurt in the process. Which makes me very upset, I try to talk her out of caring for people that do not deserve it, but she still does.(I tend to hold grudges....I know it's something I'm working on)   She's compasionate, she would do anything for anyone, go out of her way to do anything for you, and always thinks of others before herself. She has given her heart away to people that have broken it. I have cried with her, laughed with her, we've gone on trips and she has been there for me, she has kept my secrets (shhhh) :) and she is the greatest aunt to my kids. She thought love would not come her way......and then she met him

and married her for time all Eternity. So really, I love him for making one of the most important people in my life, so happy. She deserves it. Now they pucker their lips together for a picture.....and they are cute!
My request now.......make me an AUNT!!
Oh another request....move closer, because I miss my sister! :)
I am so proud to have her as my sister.

Ditched school but......

So I decided to ditch school today,(I know I will be sorry).....but I was very productive! I've been missing cooking and baking, since I've been on this "losing weight" thing. I know my family misses it too right? Well let's hope so.
Today I made my whole wheat homemade bread, a raspberry glazed pork roast, raspberry bars, and sugar cookie dough (that we will have fun with later). I also made baked potatoes, and buiscuits for our dinner tonight. Yay! I feel so accomplished, even though I'm way behind on laundry, my room is a disaster, and I ruined my perfect attendance in my math class....

I will post recipes soon....first I will post the Whole Wheat Bread recipe. I was terrified of making bread. yeast always scared me (don't ask me why, but it did.) My good friend taught me this amazing bread recipe, and it's super easy....all you need is a kitchen aid, dough enhancer (walmart), wheat gluten (walmart) yeast, honey, whole wheat flour, oil, salt, and sugar.

We made it to 4!

So here we are, Friday......it crept up on me.
This week (wednesday the 9th) Rick and I celebrated 4 years of marriage. We got a couples massage, ate at the Cheesecake Factory, had frozen yogurt and went to the movies. It was such a great time! I'm so incredibly blessed to have him in my life. I thought it would be fun to post how we met. I'm sure many of you have heard but here it is:
This is where we found each other.
I found his profile, I read it, I loved his picture....which was him in front of the Venetian Hotel in Vegas dressed in his Gondolier outfit...I thought to myself..."wow this guy would be so cool to hang with" and so I tagged his page. The website notified him, that I had tagged his page in my favorites, so he sent me a message. It went something like this....
"I'm so down to meet you" Rick
How could I resist that!? LOL, so we emailed back in forth, we chatted once, and we decided to meet up. I invited him to come have dinner with my family for my sister's birthday, January 9th....I figured, what better way to get to know a guy, than to see how he handles being with my whole family the first time we meet? So he did, he brought his daughter, and we all went out to dinner for my sister's birthday. We ate, talked, had fun, came back to my parent's house, and then he did it.....he sang Happy Birthday in Italian to my sister! I was so amazed at how confident, relaxed, fun, and how amazing he sounded when he sang. That was a tuesday.
He came over the next day,  we talked about everything we needed to talk about at my parent's house, sitting on the couch. That was a wednesday.
Thursday we didn't see each other. Friday I went to his house. We had decided we would watch a movie together, The Notebook. I know cheesy, but we like it. While we watched the movie, we decided we should get married. We decided May, would be a good month, it would give us 4months to get it together. The next day, we decided we didn't want to wait that long, so we decided April would be a good month....somewhere in those days, we decided that April was just too long to wait so 11 days after we met, he took me here

He got down on one knee and proposed! I think this is actually the table we were at too....right in front of the Salt Lake Temple. That was on a saturday. We decided to get married on February 9th 2007, exactly one month after we met. We gave our parents 2 weeks to prepare! We had a small wedding, at his aunt Cha's house in Bountiful. I think we had about 30 people there, only our close family. It was small, with great food, great people that love us.....and our journey began. One year later, we got sealed For Time and all Eternity here

It was one of the best days of my life, and I have Rick to thank for it. He lived his life in such a way, that we were able to enter this sacred place, and have an Eternal marriage. I thank Heavenly Father every day for that. Sure, it has not been easy blending families....but it has been the best 4 years of my life alongside my Eternal Companion. I look forward to Forever with him.

Low Carb, no sugar Chocolate cake!


So here it is! I finally had a little bit of time today and I decided to make it.....the famous chocolate cake with no flour.....what is it made of you ask? BLACK BEANS! Yep, I was shocked and skeptical about this....but it is truly delicious! You can find the original recipe here http://www.healthyindulgences.blogspot.com/    I did tweek it a little because this lady only uses certain products and I didn't have them all.....below are some pics. I will post the recipe off to the left. It is so YUMMY! My kids loved it!



 The only thing that is not so healthy is the buttercream frosting...but we can't get too picky now can we :) There is a recipe for a healthy frosting, but it was too complicated so I decided to go with the regular recipe.
 The only thing I will do differently next time, is that I will double the recipe because it does not rise, so I will add more layers to the cake....
